Ingredients
- Nonstick spray
- 1 and 1⁄2 cups gluten-free oats
- 1 cup chopped mixed nuts (I used walnuts, pecans, and almonds!)
- 4 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 3 cups greek yogurt
- Assorted sliced fruits for topping (I used blueberries, strawberries, and bananas!)
Prep
- Preheat the oven to 325 degrees. Grease a 9″ pie pan with nonstick spray.
- In a large bowl, mix together oats, chopped nuts, butter, honey, and vanilla extract until well combined.
- Press the crust mixture into the greased pie pan using a measuring cup to press the granola evenly across the bottom and sides.
- Bake the crust for 15 minutes until lightly golden. Allow the crust to cool completely before proceeding.
- Fill the crust with greek yogurt and smooth out the top. Add sliced fruits on top, any of your choosing, and serve right away!
